Ingredients
- Beef: 1 kilo (with an extra ounce / cut into cubes)
- Salt: 3 teaspoons
- Vegetable oil: 4 tablespoons
- Onion: 1 piece (medium size / finely chopped)
- Celery: 2 tablets ( finely chopped Soft)
- Meat broth: 4 cups
- Water: 4 cups
- Tomato: 750 grams (cut into cubes)
- Bay leaves: 2 leaves
- Dry coriander: 1 teaspoon
- Chili: 1 teaspoon (ground)
- Garlic: 2 cloves
- Walnut: 250 grams (mashed with garlic)
- long-grain rice: half a cup
- lemon juice: 2 tablespoons
- parsley: a quarter cup (fresh and chopped)
- dill: a quarter cup (chopped)
How to prepare
1. Bring the meat to salt.
2. Add oil to a saucepan, on medium heat, and when it is heated, fry the meat in two batches, stirring each time, until the meat becomes brown on all sides.
3. Add the tomatoes to the saucepan (without cleaning it), along with the broth, water, bay leaves, and brown meat. When the broth boils, the pot is covered and kept on the stove for two hours, until the meat is completely cooked.
4. Add rice to the saucepan, with a mixture of crushed garlic and walnuts, as well as coriander and ground chili. Cover the pot, and let it steep for twenty minutes. After the said time has elapsed, add parsley and dill. Cover the pot, and leave it on the stove for ten minutes. Salt the soup and season, as desired. Garnish the plate with more chopped parsley.
