Chef's advice
When you are preparing the broth during its preparation, add the shrimp peel to give a stronger flavor. You can substitute the fish broth for the chicken broth if you like according to your desire.
Ingredients
- 3 cups or the equivalent of 750 ml fish broth
- A tablespoon of fresh and chopped fresh herbs, or a teaspoon of dried ones
- Half a teaspoon of lemon zest
- 2 tablespoons of Thai fish sauce
- 250g baby mushrooms, sliced,
- 500g large, peeled, leafed prawns
- 1/3 cup, or the equivalent of 90 ml of cream
- 125g bean sprouts
- 2 green onions, chopped 2 cm long
- 1 teaspoon of hot pepper paste
- One-third of a cup or the equivalent of 90 ml of lemon juice
- 3 tablespoons of chopped fresh coriander
- Freshly ground black pepper
How to prepare
- Put the broth in a saucepan and bring it to a boil۔ Add the flavored herbs, lemon zest, fish sauce, mushrooms, and prawns. Leave the ingredients for 3 or 4 minutes on heat or until the shrimp changes color
- Reduce the temperature, then add the cream and leave it for 2 or 3 minutes, or until it warms well.
- Remove the saucepan from the heat and add the bean sprouts, onions, hot pepper paste, lemon juice, coriander, and black pepper, to taste, and serve the soup.
